Homemade Goldfish

Here me out . . . I actually think these turned out better than store bought. These were WAY easier than you would think they would be, and made for a perfect activity for the kids while they were at home for MLK day. With all the news about our deceiving food industry as of lately, I’ve been trying to find replacement recipes for all the things we can’t do without in the Moore house. For my husband and kids, that starts with GOLDFISH! These turned out crunchy, salty, perfectly flakey, and just the right amount of {extra} cheese.

RECIPE

3 cups shredded sharp cheddar cheese (about 8 ounces, and best if you shred the cheese at home from block)

1 cup all purpose flour

1/2 teaspoon paprika

1/4 teaspoon onion powder

1/4 teaspoon sea salt

6 tablespoons cold salted butter, cut into small pieces

2 tablespoons cold water

(sea salt to sprinkle the crackers when they come out of the oven)

  1. Preheat oven to 350 degrees and line baking sheets with parchment paper.

  2. In a blender or food processor, mix up the cheese, flour, paprika, onion powder, sea salt. Pulse until the cheese mixes into the flour. Add the cold chunks of butter and add water in small amounts at a time. Dough should come together and form cheese dough balls.

  3. Roll the dough out on floured parchment paper. Divide the dough into a few sections. Roll the dough super thin and use your goldfish cutter.

  4. Carefully transfer the cut out fish to the parchment paper.

  5. Bake 15 minutes, until they look golden.

  6. Take out and sprinkle with a dusting of sea salt. ENJOY :)
