Watermelon Sorbet

2 cups watermelon cubed

1/2 lime juiced

Tbsp sugar

  1. Dice your watermelon and place the pieces in the freezer overnight. After a few hours in the freezer, you can proceed, but if the watermelon is not completely frozen, you’ll have more of a slushy than a solid sorbet.

  2. Place your diced, frozen watermelon into the Vitamix (or your food processor). Add the lime juice (about 2 1/2cups watermelon per 1/2 lime). Add the sugar at the same time as the lime juice.

  3. Continue to process all three ingredients until you get a sorbet like texture.

  4. Add mint for garnish or a dollop of whipped cream.

  5. Enjoy!

Watermelon feta salad

1/2 seedless watermelon

1 block organic feta cheese, cut into cubes

fresh basil leaves, as much as you wish to taste (shredded)

8 mini cucumbers, sliced into 1/2 slices

1/4 red onion

2 tablespoons olive oil

1/2 juice of a lime

  1. Mix the watermelon, cucumbers, and onion

  2. Sprinkle the feta throughout

  3. Add in the lime juice, basil, and olive oil

  4. Mix all together and enjoy!

Watermelon Salsa

2 1/2 cups seedless watermelon, diced finely

1 small red bell pepper, seeded and finely diced (3/4 cup)

1/2 cup chopped cilantro

1/4 cup red onion finely diced

1 lime, juiced

1/4 pink sea salt

  1. Add all ingredients into a bowl and toss together. Chill until serving and enjoy chilled! Serve with your favorite tortilla chips!
