Favorite Watermelon Recipes
Watermelon Sorbet
2 cups watermelon cubed
1/2 lime juiced
Tbsp sugar
Dice your watermelon and place the pieces in the freezer overnight. After a few hours in the freezer, you can proceed, but if the watermelon is not completely frozen, you’ll have more of a slushy than a solid sorbet.
Place your diced, frozen watermelon into the Vitamix (or your food processor). Add the lime juice (about 2 1/2cups watermelon per 1/2 lime). Add the sugar at the same time as the lime juice.
Continue to process all three ingredients until you get a sorbet like texture.
Add mint for garnish or a dollop of whipped cream.

Watermelon feta salad
1/2 seedless watermelon
1 block organic feta cheese, cut into cubes
fresh basil leaves, as much as you wish to taste (shredded)
8 mini cucumbers, sliced into 1/2 slices
1/4 red onion
2 tablespoons olive oil
1/2 juice of a lime
Mix the watermelon, cucumbers, and onion
Sprinkle the feta throughout
Add in the lime juice, basil, and olive oil
Mix all together and enjoy!
Watermelon Salsa
2 1/2 cups seedless watermelon, diced finely
1 small red bell pepper, seeded and finely diced (3/4 cup)
1/2 cup chopped cilantro
1/4 cup red onion finely diced
1 lime, juiced
1/4 pink sea salt
Add all ingredients into a bowl and toss together. Chill until serving and enjoy chilled! Serve with your favorite tortilla chips!
